In many parts of the country, watermelon is now in season – or soon will be. Be sure to snatch some up; it’s good for you! One wedge has about 86 calories, not even quite a gram of fat, no cholesterol, 2 grams of protein, 5% of the daily value of fiber – and just a little sugar (18 grams) to quell your sweet tooth.
Certainly eating a chilled wedge is a delicious way to eat all this goodness – but it’s certainly not the only way!

4. Watermelon Shakes
Simple to make; you can also pour it into frozen pop containers for a cool summer treat. Just blend together 8 oz. lemon yogurt, 2 cups of cubed, seedless watermelon, 1 pint of hulled strawberries, and 1 banana, peeled. Blenderize until smooth.
5. Spiked Watermelon Balls
Pour 1/3 cup of water into a saucepan and bring to a boil.
Add 1/3 cup granulated sugar, stirring until dissolved, simmering for 3 minutes. Add ½ cup light rum and simmer for 2 minutes. Remove the pan from the stove and allow the contents to cool slightly. Add 1/3 cup freshly squeezed lime juice and a teaspoon of grated lime peel.
Using a melon baller (a special type of spoon), scoop out about a quarter of one small watermelon, creating balls. Place the balls in a bowl and pour the rum mixture over them. Stir gently, cover, and refrigerate for at least 3 hours.
6. Watermelon Lemonade
In a pitcher, pour 8 oz. freshly squeezed lemon juice, 16 oz. fresh watermelon puree (strained), ¾ cup simple syrup (1 part water and one part sugar stirred over medium high heat until the sugar dissolves), and 24 oz. water. Stir together and chill for several hours before serving.
7. Watermelon Salsa
Unique and tasty.
In a large bowl, mix 1 cup diced nectarine (unpeeled), 2 jalapeño peppers (seeded and chopped fine), 1 tablespoon granulated sugar, 3 tablespoons freshly squeezed lime juice, 2 teaspoons orange zest, and 2 teaspoons grated ginger.
Allow to stand at room temperature for 15 minutes. Stir in 2 cups diced, seeded watermelon, ½ cup chopped cilantro, and 1/3 cup diced red onion.
