What Could be Better Than Cookie in Pizza Form?

I proudly admit that I am a cookie freak. That can be a bad thing, I guess, because who really counts how many cookies you’ve had at a sitting?

Not me.

Three or four? I slow down when I start to hit double figures.

Maybe your cookie-consumption threshold isn’t quite as high, but cookies still seem to be widely loved, and expected at yuletide gatherings. Never trust someone who doesn’t have a least one cookie from the holiday table, that’s what I say.

Here is a recipe for a holiday cookie pizza that is rich, moist and a treat that puts a twist on the old circular concept by melding the cookie into pizza form.

It’s fun to eat, so it’s perfect for a Christmas party at home or the office.

It’ll even give you a little practice with making your own dough.

 

Ingredients

For the crust, you’ll need

  • 1/4 cup butter-flavored shortening
  • 1/4 cup of margarine or butter, softened
  • 1 egg
  • 1 cup firmly packed brown sugar
  • 1 teaspoon vanilla extract
  • 1 cup all purpose flour

For the topping, you’ll need

  • 1 cup (6 ounces) semisweet chocolate chips
  • 1 cup finely chopped pecans
  • ¾ cup sweetened shredded coconut, divided
  • 1 can (14 ounces) sweetened condensed milk
  • ½ cup semisweet chocolate baking pieces

Preparation Instructions

Preheat the oven to 350 degrees. To make the crust, cream the butter, shortening, and sugar until fluffy. Add egg and vanilla extract and beat until smooth.

Stir in the flour and knead until a soft dough forms. Press the dough into the bottom and ½ inch up the sides of a greased 12-inch round pan.

To make the topping, sprinkle chocolate chips and pecans over the crust. Sprinkle ½ cup coconut evenly over and pour condense milk evenly over.

Cookie in Pizza Form

Bake 25 or 30 minutes or until the crust is golden brown. Place chocolate pieces on top while cookie is still warm. Sprinkle what’s left of the coconut evenly over. Cool in pan.

Store this in an airtight container.

But if you want to complete the effect, put your holiday cookie into a pizza box.
